In this context, German chef Joachim Koerper, who has over five decades of experience, conjures up Mediterranean-inspired dishes with meticulous creativity.
Joachim has always preferred to base his cuisine on locally sourced, seasonal ingredients. This is why he offers a selection of four menus: the “20 Years of the Eleven Restaurant,” featuring dishes that have marked his career in different countries; a seasonal menu; a vegetarian option; and, lastly, the “Lavagante Azul,” which showcases the blue lobster after which it is named. À la carte options are also available. You can try the chef’s signature dishes such as “My Day in Singapore’s Food Market,” prepared with lacquered suckling pig, fried rice, mango, and shrimp, or the cassoulet of white asparagus served with teardrop peas and caviar. Don’t forget to enjoy Koerper’s special wine.
Joachim Koerper long ago fell in love with the cuisine and ingredients of Southern Europe, and he is now widely acclaimed as one of the most important masters of Mediterranean cuisine.
“My adventure in the world of gastronomy started 50 years ago in Germany, my home country. In the following five decades, I lived and cooked in several countries, where I gained my training and experience as a chef as well as a person. This menu is a voyage through that life journey, featuring culinary creations inspired by the places that have meant the most to me. I hope that through them, you will be able to discover my essence.”
Eleven was founded when 11 friends wanted to create a world-class restaurant in the heart of Lisbon. Its Grand Chef, Joachim Koerper, has worked in several Michelin-starred restaurants (including the three-Michelin-starred L’Ambroisie in Paris) and has earned a total of five Michelin stars himself, including one Michelin star for Eleven. Koerper is widely recognized as one of the masters of Mediterranean cuisine.
Eleven is located away from the historic areas. The purpose-built minimalist restaurant was designed with light in mind, offering changing views throughout the day over Lisbon and the River Tagus.
Koerper’s philosophy is that the menu should change daily to reflect the best available seasonal ingredients. Everything is made fresh daily, including stocks, sauces, pastas, and desserts.
